Frozen Movie Meal



My husband loves my cooking, but even he would say that I make horrible pancakes–until I made Norwegian Pancakes.  These thin, beautiful pancakes are very similar to a French crepe.  They’re easy to make and taste delicious.  Tonight, before you watch Frozen, cook up some of these for supper, just to get in the theme of things.

To start, beat 3 eggs well.  Then, use a whisk to add 1 cup of flour and 1/2 teaspoon salt.  This will be really thick.  Put 2 tablespoons of butter in a separate dish and melt it in the microwave.  Add the melted butter to the thick mixture.  Next, gradually whisk in 1 1/2 cups milk, until the batter is smooth.  That’s it for the batter.

To cook them, I heated a nonstick skillet on medium heat.  RecipeGirl says that you can fry several at a time on a griddle, if you aren’t concerned about the shape.  I like them pretty and round, so I use a skillet.  (Also, my griddle is broken, so there’s that too.)

Slice of a thin bit of butter or margarine and let it melt in your pan.  Use a measuring cup to pour in 1/4 cup of batter at a time.  Quickly tilt your pan around to allow the batter to spread to cover the whole bottom.

Let the bottom cook.  They cook quickly.  For each of mine, it took about 25-30 seconds before it was ready to flip.  You will know it is time to flip it when the top becomes set.  It will look almost cake-like (instead of glossy) and the sides will begin to pull away from the pan.  When the pancake is set, flip it with a large turner.

Allow the bottom side to cook also (just a few seconds).  Slide that pancake out onto a platter and repeat the process, beginning with the butter, until you’ve used all of the batter.

Each time I’ve made these, my first one turns out not very pretty.  I think I am too impatient and I don’t let the pan get warm enough.  If this happens to you, don’t worry; the others will turn out beautifully.  Even I can cook a pretty pancake with this recipe!

I get 11-12 pancakes when I make these.  You can plan on about 3 per person.

To serve your Norwegian pancakes, roll them and top with berries, jam, and/or syrup.  At our house, we top them with cherry pie filling and a sprinkling of powdered sugar.  (Tell the kids they can add some of Elsa’s snow on top!)  Sometimes, we put a little bit of maple syrup on it too, but it’s really not necessary.  I could even eat one plain, to be honest.  These are so good, it’s like having dessert for your meal.
